Brazilian Sarapatel
Ingredients
1 kilogram of Preparation of Sarapatel
4 Garlic cloves
1 Onion
3 Tomatoes
1 Red pepper
2 Bay leaves
3 tablespoons of Vinegar
½ cup of Pork lard or oil
2 Lemons
Chopped green onion
Black pepper
1 pinch of Salt
Preparation
Step 1 : The preparation begins by reserving the blood and washing the pork pieces with lemon.
Step 2 : Place a pot of water to boil and blanch the pork pieces for 2 to 3 minutes.
Step 3 : Then finely chop the garlic, onion, tomatoes, and pepper, and also cut the blanched pork into small cubes.
Step 4 : Mix all ingredients and add vinegar, cilantro, a bit of blood, and season with salt and pepper to taste.
Step 5 : In a hot skillet with pork lard and bay leaves, sauté the sarapatel for 15 to 20 minutes, stirring occasionally to prevent burning.
Step 6 : Add water and cook for 30 minutes.
Step 7 : Then add the remaining blood, adjust seasoning with salt and pepper, and simmer on low heat.
Step 8 : Once cooked, serve the sarapatel accompanied by collard green flour or white rice.
