Ingredients
500 grams of Cod loin
2 Cooked potatoes
3 Onions
1 Julienned onions
2 Cooked onions
1 Chopped leek head
1 Red pepper
3 Tomatoes
3 Garlic cloves
1 cup of Red wine
1 teaspoon of Sweet paprika
1 Basil sprig
1 Cilantro sprig
1 Parsley sprig
7 Black olives
2 cups of Olive oil
Preparation
Step 1 : In a skillet, heat the olive oil and lightly brown the chopped onion and minced garlic.
Step 2 : Then, add the red pepper, chopped fresh tomatoes, cilantro, parsley, leek, basil, sweet paprika, and a splash of red wine.
Step 3 : Let all this cook for about 10 to 15 minutes, until you get a smooth broth with a consistent texture.
Step 4 : Meanwhile, the Norwegian cod is blanched in boiling water for about 5 minutes until lightly cooked.
Step 5 : Remove and quickly place it into the prepared sauce, allowing it to absorb the flavors.
Step 6 : On the other hand, the potatoes are sliced and fried in olive oil until golden, forming a crispy and tasty accompaniment.
Step 7 : For serving, place the cod in the center of a platter, surrounded by the golden potatoes, cooked onions, black olives, and grilled red pepper slices.
