Duck in the Pará tucupi

Ingredients

2 kilograms of Duck

1 Pack of jambu

1 liter of Tucupi

¼ kilogram of Shrimp

1 Chopped onion

4 Chopped garlic cloves

1 Lemon

1 cup of Extra virgin olive oil

½ cup of White wine vinegar

Black pepper

1 pinch of Salt

Preparation

Step 1 : The first step is to cut the duck into pieces and place it in a container with the onion, garlic, olive oil, vinegar, lemon juice, pepper, and parsley or cilantro.

Step 2 : Let marinate overnight in the refrigerator or at least 2 hours before cooking to enhance the flavor of the duck in tucupi.

Step 3 : Once the marinating time has passed, place the duck in a baking dish, sprinkle with the marinade, season with salt, cover with aluminum foil, and bake at 160°C for 2 hours until nearly done.

Step 4 : While the duck is baking, boil the tucupi in a pot for 20 minutes.

Step 5 : Then add the duck juices, jambu, and shrimp, and cook for another 10 minutes.

Step 6 : When finished cooking, serve the duck in tucupi accompanied by rice and hard, granular manioc flour.
