Mining feijoada is an iconic dish of Brazilian cuisine, prepared with various meats and black beans, slow-cooked to enhance their flavors.
Inspired by recipes from Minas Gerais, it combines different types of pork and beef, accompanied by aromatic seasonings.
It is served with rice, miner's cabbage, cassava flour, and chopped oranges, creating a culinary experience full of tradition and authentic flavor.
Mining Feijoada
Ingredients
½ kilogram of Beef
1 kilogram of Black beans
1 kilogram of Chorizo
1 kilogram of Pork loin
2 Pork ears
4 Pork sausages
2 Pork legs
2 Pork tails
Chili pepper
Oil
1 Garlic
1 Onion
1 pinch of Salt
Preparation
Step 1 : The beef is seasoned and cooked the day before, then reserved in the refrigerator.
Step 2 : In another pot, cooked sausages are prepared and also reserved.
Step 3 : Pork ears, legs, and tails are seasoned and cooked along with the meat, removing the fat that accumulates on the surface after cooking.
Step 4 : The next day, the black beans are cooked in a pot until tender.
Step 5 : In a skillet with a little oil, sauté garlic, onion, and chili pepper until fragrant.
Step 6 : To this sauté, add the cooked meats, including chorizo and pork sausages, and let cook slowly over a clay pot for about half an hour.
Step 7 : The feijoada is served hot, accompanied by white rice, miner's cabbage, cassava flour, and chopped oranges, offering a complete and appetizing presentation of the dish.
