Carrot Pudding (Bolo de Cenoura)
Ingredients

½ cup of Oil
3 Grated carrots
4 Eggs
2 cups of Sugar
2 ½ cups of Flour
1 tablespoon of Baking powder
200 grams of Cream
200 grams of Semi-dark chocolate
20 grams of Butter
Preparation
Step 1 : Place the grated carrots, eggs, and oil in the blender and process until you get a smooth mixture.
Step 2 : Add the sugar to the blender and beat for a few more minutes.
Step 3 : Pour the mixture into a large bowl and gently fold in the flour.
Step 4 : Incorporate the baking powder and stir gently until well combined.
Step 5 : Grease and flour a pudding mold and pour the mixture inside.
Step 6 : Bake in a preheated oven at 180°C for approximately 40 minutes, until golden and a toothpick inserted comes out clean.
Step 7 : Allow the pudding to cool to room temperature before preparing the glaze.
Step 8 : To make the ganache, chop the chocolate and place it in a bowl.
Step 9 : Heat the cream until boiling and pour it over the chocolate, adding the butter and stirring until you obtain a shiny, smooth mixture.
Step 10 : Pour the ganache over the cooled pudding to decorate and finish the preparation.
