800 grams of Barú chestnuts

2 liters of Milk

1 kilogram of Sugar

Preparation

Step 1 : First, select the Barú chestnuts, which are toasted until they develop a pleasant aroma and a golden texture.

Step 2 : Then, remove the chestnuts' skins using boiling water, making it easier to eliminate the shell.

Step 3 : Once peeled, the chestnuts are carefully ground with a meat grinder until obtaining a smooth paste.

Step 4 : Place a large pot over medium heat and add the milk and sugar.

Step 5 : Stir continuously with a wooden spoon or spatula to prevent sticking and burning.

Step 6 : Continue this process until the mixture thickens and is about to curdle, meaning it begins to have a dense texture and is at the verge of solidifying.

Step 7 : When this point is reached, add the ground and toasted chestnuts, gently mixing to incorporate all the preparation evenly.

Step 8 : Then, remove the pot from the heat, and beat the mixture slightly to achieve a smoother and creamier texture.

Step 9 : Next, pour the preparation over a flat surface previously greased with oil or butter, such as a stone or table.

Step 10 : Using a spatula, spread and level the mixture.

Step 11 : Allow to cool until it solidifies.

Step 12 : When the mixture has reached the desired consistency, cut into tablets or form balls with your hands, according to preference.
