Ingredients

4 Fresh corn cobs

½ liter of Water

2 tablespoons of Olive oil

4 Minced garlic cloves

½ Chopped onion

1 cup of Green corn kernels

1 tablespoon of Saffron

100 grams of Shredded chicken breast

Calabrian pepper

1 pinch of Salt

Chopped parsley

500 milliliters of Hot water

1 pinch of Pepper

Preparation

Step 1 : To prepare this delicious creamy corn soup, first cut the kernels off the cob and place them in a blender with half a liter of water.

Step 2 : Then, blend the mixture on high speed for a few minutes and strain to reserve the juice.

Step 3 : In a saucepan, heat the oil and sauté the garlic and onion.

Step 4 : Next, add the cup of corn, saffron, shredded chicken, calabrian pepper, and salt, stirring and cooking for 5 minutes.

Step 5 : Then, incorporate the reserved corn juice, stirring constantly to prevent lumps from forming.

Step 6 : When the cream begins to thicken, add hot water to achieve the desired soup consistency.

Step 7 : Let it cook for 30 minutes, stirring continuously.

Step 8 : Finally, add chopped parsley and pieces of cooked corn, and serve hot.
