Ingredients
4 cups of Water
½ cup of Cassava Goma (Tapioca Gum)
1 cup of Salt
500 grams of Salted Shrimp
5 Chicória Leaves
2 Jambu Seeds
2 liters of Tucupi
4 Chilies
4 Garlic Cloves
Preparation
Step 1 : In a pot, place the tucupi with crushed garlic, a pinch of salt, chicória, and peppers, and bring to medium heat.
Step 2 : When it boils, cover the pot and cook over low heat for 30 minutes.
Step 3 : Meanwhile, cook the jambú in a separate pot.
Step 4 : Once ready, turn off the first pot and remove the water.
Step 5 : Cook the shrimp in 4 cups of water.
Step 6 : After boiling, wait 5 minutes and remove the shells and heads.
Step 7 : Mix the shrimp broth with the tapioca gum and beat until achieving a homogeneous consistency.
Step 8 : Finally, serve and enjoy.
