Tucupi Soup
Ingredients
1 liter of Tucupi
4 Garlic cloves
3 Chicory leaves
3 Basil leaves
4 tablespoons of Tapioca gum packs
½ tablespoon of Salt
1 Curry pepper
1 liter of Water
3 Jambú packages
500 grams of Desalted shrimp
Preparation
Step 1 : In a saucepan, place the tucupi, crushed garlic, chicory leaves, basil, pepper, and a pinch of salt.
Step 2 : Let it cook for about 5 minutes.
Step 3 : In another saucepan, heat 500 ml of water with a pinch of salt.
Step 4 : Once the water boils, add the jambú.
Step 5 : In a separate saucepan, dissolve the tapioca gum in 500 ml of cold water.
Step 6 : Bring to the heat and stir constantly until the gum becomes transparent and thickens.
Step 7 : Keep it hot on the stove to prevent it from hardening.
Step 8 : Proceed to assemble the dish in a small bowl, placing a portion of tucupi, then a portion of tapioca gum, another of tucupi, 4 or 5 shrimp, and a little boiled jambú on top.
Step 9 : It is recommended to enjoy it very hot.
